Quick & Healthful: Pear, Cranberry, and Beef Tenderloin Salad

This tasty and light salad can be prepared in only 25 minutes, making it ideal for hectic weeknights.


Four beef tenderloin steaks (4 ounces each) are the ingredients.


Half a teaspoon black pepper


Five ounces of mixed salad greens


One juicy pear cut into slices


1/4 cup of cranberries, dried


1/4 cup of pecans, toasted


1/4 cup goat cheese, if desired


Honey Mustard Dressing:


Half a cup of honey mustard


Two to three tablespoons of water


1 1/2 teaspoons of olive oil


One teaspoon of white vinegar


To taste, add salt and pepper.


Instructions:

Cook Steak: To get the required doneness, season steaks and cook them in a skillet for 7 to 10 minutes.


In a bowl, whisk together all the ingredients for the dressing.


To assemble the salad, place the cranberries, pear, and greens on plates. Add cheese, pecans, steak slices, and dressing on top.


Advice: Toast pecans for three to five minutes at 350°F.


The grill option functions similarly.
