Ginger Pound Cake Made at Home with Lemon Glaze
Ingredients:
One box of pound cake mix, plain
Two tablespoons of fresh or store-bought minced ginger
One cup of powdered sugar
1/4 cup of freshly squeezed lemon juice
Instructions:
Make the Batter: Make the batter according to the directions on the pound cake mix bag. Make sure the minced ginger is equally distributed by stirring it in.
Get the pan ready: To avoid sticking, use a non-stick spray to grease an 8 x 4-inch loaf pan.
Bake the Cake: As directed on the packet, pour the batter into the prepared pan and bake.
Cool the Cake: After the cake is done baking, take it out of the oven and let it cool in the pan before transporting it to a platter.
To make the glaze, combine the powdered sugar and fresh lemon juice in a small bowl and whisk until smooth. To make this glaze pourable, add a few drops of fresh water if it appears to be too thick.
