Adding white button mushrooms to a rich sun-dried tomato and parmesan cream sauce elevates this dish, which is a variation on the popular "Marry Me Chicken." It is a delicious, one-pan dish that is sure to impress when combined with fresh spinach and fettuccine.
Ingredients
One pound of fettuccine or tagliatelle pasta
One pound of skinless, boneless chicken breast, sliced into ½-inch pieces
One-half teaspoon kosher salt, separated
Half a teaspoon of freshly ground black pepper, separated
One 8-ounce jar of sun-dried tomatoes packed with oil, rinsed and chopped (save 2 tablespoons of oil)
One pound of sliced white button mushrooms
One sliced yellow onion
Six minced garlic cloves
Two teaspoons of freshly minced rosemary
Two cups of chicken broth
8 ounces of chunked full-fat cream cheese
One cup of parmesan cheese, finely grated, plus additional for serving
Five ounces of baby spinach, or roughly five packed cups
Instructions
Cook the Pasta: Make pasta as directed on the package. Set aside 1 cup of pasta water after draining.
Season the chicken with half the salt and pepper before searing it. In a large skillet, heat 1 tablespoon of the sun-dried tomato oil that was set aside over medium-high heat. Cook the chicken for 3–4 minutes on each side, or until browned on both sides. Move to a dish.
Add the remaining 1 tablespoon of the saved oil to the same skillet and sauté the vegetables. Sauté the garlic, onion, and mushrooms for 5 to 6 minutes, or until the mushrooms are soft and the onions are transparent.
Build the Sauce: Add the remaining salt and pepper, sun-dried tomatoes, and rosemary. Cook for one minute. Add the chicken broth, making sure to scrape off any browned bits. Stir in the parmesan and cream cheese until they melt.
Mix Everything Together: Add the cooked pasta and chicken back to the pan. If necessary, stir in some of the pasta water that was set aside to make a creamy sauce. After adding the spinach, heat it until it slightly wilts.
To serve and savor, divide into bowls and sprinkle with additional parmesan cheese.
