Ingredients

Half a cup of chopped onion


One teaspoon of curry powder


Quaker instant grits, half a cup


Half a teaspoon of turmeric


One cup of okra


Half a teaspoon of thyme


Half a teaspoon of oregano


Half a teaspoon red pepper flakes


One can of diced fiesta tomatoes


A dash of salt


A handful of mustard greens or cabbage


Step 1 of Preparation: Sauté the Aromatics

In a pan, heat the oil over medium-high heat. Cook the onions until they are transparent.


Step 2: Include the Vegetables and Spices

Add the red pepper flakes, oregano, thyme, turmeric, curry powder, and curry powder. Add the greens and fiesta tomatoes after a minute of cooking. Stir for three to five more minutes.


Step 3: Include liquid

Add six glasses of water, coconut milk, or unsweetened almond milk.


Bring to a boil in step four.

Allow the mixture to boil for two minutes while the pan is covered.


Cook the Grits in Step Five

Add the grits gradually while adding salt to taste. Cook, stirring, for 5 to 7 minutes, or until desired thickness is achieved.
